One of my favorite condiments for good 'ol fried catfish is chipotle tartar
sauce -- try it out.  I also dip my jalapeno hush puppies in it.  And serve the
whole thing on a bed of roasted serrano and pineapple slaw.  Mmmmm....fried
food....
