Today a friend showed me a small grocery called the Jaffa Super Market, where I saw a lot of middle-eastern products I haven't seen before, including some cheeses. I was scanning along a shelf, looking at jars of olive oil and balls of cheese that almost looked like duck eggs. Suddenly, I saw a facing of the same product, with red pepper flakes in the oil. A buzzer went off in my head. So, apparently this is a sheep's milk yogurt cheese. It's from Green Cedar Dairy in Dearborn, Michigan. The ingredients are: Pasteurized grade A milk, olive oil, active culture, & salt. (No mention of the red pepper). Imagine cream cheese, only softer, with a richer flavor and a lot of salt. This would be nice spread on a toasted bagel or pita, or rolled in a grape leaf or stuffed in an olive. I got about halfway through the jar before I stopped myself. Then I added about 1 tablespoon of red pepper flakes, and I'll let that rest and combine flavors until tomorrow (if I can keep my hands off it).
