I got this recipe for hush puppies from this list this winter -- we like
'em. My old computer crashed (damned windows) so I can't give credit where
credit is due for the recipe -- whomever sent it -- thanks, we've made them
several times.
1 cup flour
2/3 cup corn meal
1 teaspoon salt
2 teaspoons baking powder
2 eggs
1 small to medium onion chopped fine
2/3 cup water
chopped jalapeno or other pepper to taste
Mix together and drop by teaspoon into hot shortening. Fry till golden
brown, drain on paper towels and eat yum-yum
Another recipe for batter for deep frying
1 can stale beer -- open it the night before and pour into a glass pitcher,
leave out to loose 'fizz'
1 can flour (1 and 1/2 cups)
1 teaspoon salt
1 - 2 teaspoons paprika
Habanero or cayenne pepper powder to taste, I just shake some in till I
think its enough
Dip and fry -- makes great batter for fish or onion rings.
