Hi Friends in Heat,

With great interest I'm following the vinegar discussion, and due to a
'sour'
question I have I even come out of the lurk mode.... sorry that I'm not so
active the past time, but I'm still enthusiastic growing peppers etc, once a
CH always a CH :-), just moved al my pots to a more safe corner we expect a
nice storm here in Holland.

And to get back on topic, I was wondering the vinegar is only used for
preservative right? and this works
fine because of the level of acid.
Well I've noticed in some comments that some of you are not to enthusiastic
about the vinegar taste, and personally I do not like the vinegar taste
either, but I do like a sour taste lemon, lime etc.
So question I have has any one tried to make sauce with citric acid you can
buy in crystal shape ?
I was planning to do this end of our growing season, you can buy for little
money here in Asian shops even in 2 lbs bags form and this does taste nice
(IMHO) and you can
test the acid level with litmus-paper or acid tester, I think has to go
below 3 for preservation purpose?
And citric acid is used in lots of foods as preservative too, so it's not
bad for your you...

Well I'm very interested if this has been done and how?
