When I find peppers that are of a variety I want and don't usually run across, but they are a bit wrinkled due to age, I just dry them the rest of the way. As long as they don't have any soft or rotten spots, they dry up fine and, if they are bargain priced, so much the better. Of course habs are out of my heat range.
