[CH] Lamb and Sweet Italian Sausage Cassoulet for Open Fields?

Ok, I can't decide what to make for Open Fields.  
However, I have decided to make a pot of Cassoulet
with chiles (fresh picked at OF of course).

What sounds better folks:

Lamb and Sweet Italian Sausage Cassoulet
or
Pork and Endouille Sausage Cassoulet
or
Duck and Dendouille Sausage cassoulet
or 
Peasant Cassoulet?  (pork and polish sausage)

Opinions VERY much appreciated folks!  :)
