Here's one my mom got several years ago from a Mexican lady she worked with at the time---VERY GOOD, IMHO, but note that this is not a CH version...modify the peppers as desired. Also note that the Rotel tomatoes w/ green chiles are perfect for this (again, IMHO). Anita's Salsa (non-CH version) 2 cans whole peeled tomatoes 1/2 small onion 2 cloves garlic 3 or 4 serrano peppers couple of sprigs of cilantro 1) Put onion, garlic, peppers, and cilantro in blender with the juice of the tomatoes and blend until it's almost pureed. 2) Add the whole tomatoes and just use chop speed to blend. 3) In a saucepan, heat about 2 TBSP of oil. When oil is hot, pour sauce into saucepan, bring to a boil, and shut off heat. 4) Remove from burner and pour into a bowl. May be served hot or cold. (Step 5 ... enjoy!)
