This morning I'm making an enchilada sauce (for some leftover chicken) and this time I'm applying a step I haven't done before - dry-roasting the peppers in a skillet first. I put them over medium heat and let them get just to the point of lightly starting to smoke. Also tossed in three cloves of garlic. That's all starting to simmer now, but the apartment smells fantastic. I'm waiting to see what flavor results in the sauce from adding that step.
