I made this one up the other day and it was so good!! Thought I should
share it with all of you.
Green Chile Corn Chowder
2 celery stalks - chopped
2 cloves garlic - chopped
1 medium red pepper - chopped
5-6 cooked (microwave or boil) medium red potatos - chopped
2 cups frozen corn niblets (I prefer the white)
1 jar Ol Gringo Green Chile Sauce (med or hot...I prefer hot) available @
The Pepper Shack
2 cans vegetable stock
1/2 pint heavy cream
salt & pepper to taste
In a large pot sautee celery, garlic, and red pepper till cooked through.
Add in corn and
Green Chile Sauce cook a few minutes more
Add vegetable stock, heavy cream, salt & pepper and cook till nice and hot.
If you like your soup thicker (in a separate dish) you can melt 1
talblespoon with butter and mix with flour to make a paste and add that to
soup to thicken
Perfect for a cold night!! Try it out and let me know how you liked it!!
