I work with this guy (he's the photo editor) and he knows a ton about cookie 
boards. If you have more questions, I bet he would be willing to chat.

BTW, he and I did an Iron Chef kind of thing with jalapenos. He did a 
jalapeno & prickly pear chutney with smoked pork chops served on saffron and 
jalapeno rice. I made jalapeno and peanut butter cookies with mocha chipotle 
frosting. I also made an appetizer with fresh jalapeno rings (1-inch slices) 
stuffed with a mixture of crab meat, cream cheese, shredded asiago and 
cilantro.

He took some beautiful pictures of the dishes and we're going to run the 
recipes in our Food section next august.
