Howdy Y'all, Thanks again to everyone who sent me white chili recipes a couple of weeks ago. I am entering a heavily modified version of a recipe that Frank Hashek sent me off-list, into a Girl Scouts chili cookoff. Here's the recipe I used: White Chili ======== Part 1: ---------- 2 Tbsp olive oil 1/4 tsp garlic powder 1 Tbsp New Mexico red chile powder Juice of 4 limes 1 tsp sugar Dash of kosher salt Dash of black pepper 3 chicken breasts Mix the first seven ingredients into a marinade and pour into a ziploc bag with the chicken. Marinade overnight. Grill or broil the chicken, being careful not to burn the chile powder. Reserve the remaining marinade. After cooking, allow the chicken to cool and chop it. Part 2: ---------- 1 Tbsp olive oil 4 carrots, chopped 2 small onions chopped 2 habanero peppers, chopped fine 4 mild peppers (poblanos would be good, but I used cubanelles because I'd never used them before and they were lighter in color) Heavy pinch of salt Sweat the veggies in the olive oil in a heavy pan until they are soft and fragrant. 2 lb. ground turkey Meanwhile, brown the turkey in another pan. As soon as it is browned, add the leftover marinade and cook it for anotehr few minutes. 2 14-oz. cans navy beans (approx. 4 cups) 2 14-oz. cans white corn (approx. 4 cups) 3 14-oz. can chicken broth (approx. 6 cups) 2 Tbsp ground cumin 1 Tbsp sugar 1 tsp garlic powder Add the chopped chicken, the cooked ground turkey, and the remaining ingredients to the pan with the onions, carrots, and peppers. Bring chili to a boil and then cover and lower to a simmer for about 1 hour. It has turned out moderately spicy (glad I din't put in the 4 habaneros I had planned to), and a little redder than I expected. We'll see how it goes.
