Food processing equipment can be expensive indeed. Just depends on how inovative you care to be ;-) To make flake, I use a hardwood 2 x 4 & mash whole dried pods in a 5 gl bucket. Sort of like a primitive butter churn :-) Not very expensive or efficient but it works. Screen to the size you like. To make the finer blends I use some commercial coffee grinders- the 100 lb table top kinds. The Hobarts weigh about 125 lbs it seems. Cast iron from the feel of them :-) Ditting is the other brand- lighter weight but still do a decent job. They can be expensive new but I bought most of mine on Ebay for between $150 - $250 each. 'Course they're useless for coffee grinding for this almost moderate :-) Since I've handed most of this processing off to CaJohn (another evil corporate type ;-) I don't deal much with it at all anymore. I'm also not above buying some already that way provided I know the source. An example would be the Chimayo powder I promised I'd try to hunt up again from some of my early contacts out in NM. The equipment to handle fresh chiles is *much* MUCH more expensive! -Jim C Mild to Wild(R)
