----------------------------------------------------------------------------- CUCUMBERS WITH YOGURT SAUCE Cucumbers and yogurt go together like peaches and cream. This is a Middle Eastern recipe which I have honed to perfection to suit myself. Serve it cold or cool. For heat, I would suggest seeding and finely chopping a large green jalapeņo pepper. 3 medium or 6 small farm-fresh cucumbers (Smaller, younger ones do not really need to be peeled, but remove the tougher peel on the larger, older ones.) 1.5 cups of plain yogurt (Line a large strainer with a coffee filter or a piece of cheesecloth and place the yogurt in the strainer to drain for about 45 minutes, to remove some of the water and thicken it.) 1/3 cup of premium olive oil juice of one medium lemon (about 2 Tablespoons, to taste) 2 large cloves of garlic, minced 1 teaspoon finely chopped fresh mint leaves 1 teaspoon Cavender's Greek Seasoning (Substitute 1/2 teaspoon salt, 1/4 teaspoon onion powder and 1/4 teaspoon powdered dried oregano.) 1/2 teaspoon freshly ground black pepper Mix the yogurt, olive oil and other sauce ingredients in a bowl. Taste and adjust the seasonings if you like. Then quarter the cucumbers lengthwise and dice them. Add them to the sauce, stir well, cover and store overnight in the refrigerator to develop the flavors. Enjoy this delicious summer dish!
