[CH] "Harvesting" Seeds

I'm curious, I've seen it mentioned both ways about harvesting seeds.  Many say extract seeds from a fresh but ripe pod, while others say air dry the seeds in the pod and then brake it open.
 
 What works best for folks on this list?
