We still have some pretty good, aged cheese in Canada, although like in the States, the big jerks get their mitts on the company, and then it all turns into Krap Kracker Boodle! Which is about as tasteless as the stuff in a jar! I remember in Manitoba, there was a store, which had been in the same location for about 90 years, and they had wheels sitting on a wooden butcher block, and when you wanted to buy cheese, they would uncover the wheels, let you taste each one, and then cut off the amount you required! It was still going strong in the 60's but alas is no longer there! Progress!!? Cheers, old Doug in BC
