I don't want to start a war here but personally I believe any ears and eyes left over from the war should be salt-cured with appropriate spices suitable for long pig and hung to dry. Jim Campbell's Red Savina Habanero chile powder would be a welcome addition making for an enhanced and tasty treat not to mention killing nearly all the cooties that the salt and other spices didn't get.
