The sausage which I've actually stuffed in casings is korv, a bland Swedish sausage which along with beef and pork, often contains potatoes or barley. It is stuffed in hog casings and ends up about 1 inch diameter and 16" long. It's big at Christmas time, but was available year round in my half Swedish half Italian hometown when I was growing up. I once took the hydrofoil from Copenhagen to Malmo Sweden just to say that I'd visited the auld sod and there was a korv stand at the pier. Turns out that korv is generic swedish for any sausage and I ended up with a hot dog. They call them polsers in Denmark and served them with a roll, but not on a bun. If you google korv, there are some recipes. I believe they've replaced the ferrys with a very strange looking bridge tunnel combination now. Too bad, the duty-free aquavit was ice cold and great!
