I guess I'll field this one.
It's mostly salt with 6.25 % sodium nitrite and a bit of red dye # 40.
It keeps the cooties from infesting the curing meat and keeps
the color of the meat from turning an unappetizing gray.

Salt, saltpeter, and dye.
