A while back I read "What Einstein Told His Cook" (http://tinyurl.com/4dyaz6) which has a nice chapter on sugar and other sweeteners, including stuff about organic / natural sugars. Good reading. I don't recall much chile related in it though. No book can be perfect, right? -Ben
