It's the green bean I don't like... The red serranos still taste like green beans... If one of our resident chemists can explain it... I can't. I just detest green beans... always have.

Then again, maybe I just haven't had the pleasure of good serranos... Given the fact that people who love serranos though comment that our serrano mash (made from a local organic serrano) is among the best they've ever tasted, I think I have... and it really is the flavour you like that I dislike. :) I'm not crazy about the flavour of the scotch bonnet either, but it has uses that somehow give its taste a raison d'etre... jerk being one.

Thai s are a good idea for the souffle too, but you'd have to be sure of their heat before hand, they've got great flavour, but some of them are smoking hot.
