Migas is nothing more than a scrambled egg dish with the addition of tortilla chips. There really is no recipe per se; just add whatever sounds good. Having said that, what I call a basic recipe is thus: Heat some butter and/or oil in a saute pan (med heat). Add chiles (or not if you use Luv Butter), bell pepper, and onion, all chopped nice and smallish (1/4"). Saute until somewhat soft (if adding in, say, black olives, garlic, tomatoes etc., you can do that now too). Toss in a good handful of crumbled tortilla chips. Note that this recipe is a most EXCELLENT way to dispose of all those damned little chiplettes at the bottom of a bag of tortilla chips. (Seriously. Get a big airtight bucket and save 'em). Just toss the contents of the skillet to get the tortilla chips a bit hot and sweat out some of the grease in them (if you use/eat low/no-fat chips, well, shame on you). Add 2-3 (or 4) eggs, beaten, scramble with everything in the pan. It's done when you think the eggs are done. That's migas as I know it. Peace, Hendrix, and Migas.......
