> Lose the serranos althogether, they're just plain nasty -- yucky, > they taste just like green beans... go for something with flavour > like jalapenos or cayennes Wow. I think this is the first time ever I have seen someone say jalapenos taste BETTER than serranos. It's rare enough that someone thinks jalapenos taste better than ANY capsicum. Of course, quite a few people do like the taste of jalapeno (and quite a few are amazed by this) but don't necessarily have any preference over it for other chiles, like say, serranos (generally considered the standard flavor upgrade of choice from jalapeno). But lots and lots of bell peppers are consumed here, so clearly that flavor is liked by many. I like serranos, but if you want to upgrade flavor from serranos, of course Ajo Amarillo is always numero uno though hotter (really, most any Capsicum baccatum var. pendulum cultivar will do). And rocoto (C. pubescens) is pretty tasty too. Even chile poblano should never be forgotten in the flavor department, and sometimes they're even pretty hot. Gee, the thought of that souffle made with ripe rocotos seems pretty appealing. --- Brent
