No self respecting VEGAN would even go close to that dish and I suppose they could always just munch on the peppers then wash them down with almond milk or tofu milk! I am saying all this with tongue firmly in cheek! Marie and I went to a vegetarian diet for a year or so, long time ago when attempting to lower cholesteral without using statins. My doc tried 4 different brands of statins, and I had varying degrees of reactions to them all.The vegetarian diet did not work, my cholesteral readings did not improve, and in fact became worse. My HDL was good, but my LDL was off the chart! Finally he tried fenofibrate supra, and I have been on that now for several years, with no ill effects. And lower readings all around. Interesting theory, vegetarianism! These misguided folks shun animal products in the hope of being totally healthy. The Seventh Day Adventists are all, to varying degrees, vegetarians. Some are vegans, most are not. As you see, I studied a lot about vegetarianism prior to becoming one. Fine, for those who want that life style. In our case, we decided that we liked eating seafood, chicken, pork! However, we still do not eat much beef, too may hormones in those poor animals, and having been fed a diet of mutton while growing up, I refuse to eat lamb! Personal dislike there! So, there is my take on vegetarianism! We do eat a lot of tofu, as I do a lot of Asian cooking. Cheers, old Doug in BC
