Hey Ted, JohnF (fiedlermeister) is a vegan and a very good cook. We both know how talented he is with anything peppers related. I think chicken stock is acceptable to vegans. We've traded a lot of recipes (and cookbooks) over the last few years and I'll bet he would be glad to give you some ideas. Terry, That is a great looking recipe!
