I'm with you on the cumin Alex! It's one of my 'secret ingredients' for the competition grade chile- that and a spot o' Guinness. Many, many years ago, Religious Experience Hot sauce Co (Colorado) was 'beta testing' some sauces to the list. A few of us got the 'cumin version' and found it unbeatable on Arby's roast beef sandwiches. Going to have to try CaJohn's Oaxacan the same way since it is also very heavy on the cumin.
