I absolutely agree with Mr. Jim, the Aji Amarillo makes for a wonderful powder and even better when smoked, especially over Pecan. I might suggest a cookbook of Peruvian cuisine that I have enjoyed reading and have marked a few recipes for another day: "The Exotic Kitchens of Peru - The Land of the Inca" Copeland Marks http://www.amazon.com/Exotic-Kitchens-Peru-Copeland-Marks/dp/0871319578 It's definitely not a coffee table book but I do think a decent tool of introduction and beyond to Peruvian cuisine. I do like that there is a little bit of insight with each recipe.
