[CH] Last Night's Appetizer: Scully's Scampi Chicken Wings

What made these hot was the homemade hot sauce. The original source of this didn't mention what type of hot sauce they used. I just typed in Hot Sauce but I used Frank's Extra Hot as my guests were not chile-heads!

                       Scully's Chicken Wings Scampi
 
 Recipe By     : adapted from Diners, Drive-Ins and Dives, TV Food Network

    1      4 lb bag      chicken wing sections
                         Scampi sauce:
    4      cloves        garlic -- sliced
    4      cloves        garlic -- minced
      1/2  stick         unsalted butter
    4      oz            olive oil
                         Hot Sauce -- see directions
                         parmesan cheese
 
 An hour before, mix together some hot sauce (1 bottle), 1/2 bottle of worcestershire sauce, a dollop or two of horseradish, some garlic chopped and some butter. Let it cook on the stovetop for awhile, until it begins to thicken a bit. 
 
 For the wings: Preheat oven to 400 degrees F. Put some heavy duty foil on a large cookie sheet (a rimmed pan). Brush with a bit of olive oil. Pour the bag out onto the sheet pan. Put the chicken in one even layer. Bake for 1/2 hour to 45 minutes, turning once in the middle of the baking.
 
 Remove from oven, douse in hot sauce, then put them on a hot grill pan until you get the grill marks. Then bake for another 10 minutes and then grill again. Then douse with the scampi sauce.
 
 Sprinkle with some parmesan cheese and serve.
 
 For scampi sauce: In a skillet, let the butter melt. Add the oil, minced and sliced garlic. A sprinkle of salt too. Let it simmer until the garlic is barely brown. Turn off and let it sit until the wings are ready.

 I did not grill them, I just doused them with sauce and then b
o parmesan. They were a big hit. Everyone loved them. A winner!
 
 The original idea came from a segment on Diners, Drive-Ins and Dives - a place in Miami, FL called Scully's Tavern where they make their own hot sauce and a scampi sauce and they fry the wings first, then douse, then grill, then fry again, then grill again and then they put the scampi sauce on them and sprinkle with parmesan cheese.
