Yum, Yum  P.H. Fred.....Do you put any holes in the aluminum foil cover for 
the first 6 hours so smoke flavor can permeate?  After that, when you smoke 
for an hour I would assume the meat is fully cooked and it would be more 
difficult to get the flavor infused.  Enlighten me, please!
