Just a quick update to say thanks to all who gave me SO MUCH useful information that I can't go wrong when I do my next smoke (might skip cancer support group to do it tomorrow, or not...missed too many back to back...Wednesday; yeah, Wednesday). With the exception of the vent, which I've been advised NOT to do, I've completed all of the remaining three mods: 1) external thermometer; 2) chicken-wire "rack" in the charcoal pan to let the ashes fall away from the coals; 3) moving the legs to the outside and using something---in this case, a reddish (landscaping?) 4" high semi-rounded cement block. The Cowboy all scrap-wood charoal is back on the shelves at Lowes. The money is now at Ace Hardware, where I got the chicken wire (they were very nice and cut it to size/shape for me) and an 18 lb bag of Royal Oak (which was cheaper than what I paid for the Cowboy stuff). I now have the veges (and Anaheims) that I didn't get to the other day, and two young fryer chickens waiting to be smoked. I have one final question---looking for multiple opinions to help me decide on two things for doing the chickens: 1) leave the skin on or trim it off? 2) leave the chickens whole or cut? All right...this is going to work out nicely, even if the ECB does require more attention than the WSM (which I will eventually upgrade to). For now, as in right now, after all the running around I did today, I need to get a shower before the thunderstorm that we're supposedly already getting actually gets here...and from looking at the radar just now, it's going to be a VERY short shower....
