I'm kind of like Mike.  I use real wood charcoal instead of briquettes.  We have several stores that carry it as "chunk charcoal".  Some places it is hard to find.
  
 I also use chunk wood or large pieces of wood so I don't have to replace the wood.  
  
 This is the place I get my wood from:  http://www.barbecuewood.com.  There are other vendors out there and there's one on Amazon that sells chunk too.  
  
 I have a lot of fun with different varieties.  Pecan is by far my favorite.  If you have any orchards near you, become friends with the owners or workers and then find out what they do with discarded branches or prunings.  Where popular, they almost always sell it.  But, you'd be surprised. Most fruit trees make good smoking wood.  I enjoy apple and peach wood with pork.
