Hi C-H's,
Catching up with my email after the holiday I noticed a thread about
diminishing the flavor of vinegar in hot sauces. The simplest way to
do this would be to drop a piece of limestone (calcium and magnesium
carbonates) into the sauce bottle. It will slowly reduce the acidity
of the sauce by reacting with the vinegar.
I also noticed this rather dangerous suggestion:

So to counteract excess hydrochloric acid in your stomach you drink
hydrochloric acid? I don't think so.
