You have me curious.  Mango I understand, due to the flavor it adds.
But I've never heard an explanation for why folks put something as bland
and bulky as carrot in a hot sauce.  Can you explain me why this is a
good idea? My sauce is half habs, half other very hot peppers that round
out the flavor, and just enough vinegar and brine for processing.  And
that's all, except for the love and the aging.  It's thick and delicious
and fragrant, and it's nice and hot.  I can imagine it wth mango, but
what would I gain from carrots?
