Hi Everyone, I'm looking for different ways to use my hot peppers. We have Hot & Sweet Bananas, Thai peppers, Jalapeno and Habenaro. I have been asking around everywhere. Someone gave me some recipes I thought I would share with you. Haven't tried these yet, but am getting ansy to get some made!

Chile Oil----

3/4 Cup Peanut Oil
1/4 Cup dark Seasame Oil
1 1/2 TBLS dried red chile flakes
Several whole dried red chilies

In a saucepan, combine oils & set over med. heat for 3 min. Add chile flakes & immediately remove from heat. Cover & let stand overnight. Next day, Strain into sieve, then into clean bottle. Disregard flakes. Drop a few whole dried chilies into oil for decoration and seal. Store in cool place. Makes 1 cup.

Thai Vinaigrette-----

4 serranos or green thais, stemmed
2 garlic cloves, chopped
1 tsp minced ginger
1 TBLS Thai fish or soy sauce
3 TBLS Lime juice
1/4 Cup Peanut oil

Combining all in a blender & puree until smooth. makes about 1/2 Cup.

Enjoy - Elaine
