Well ... it Has been kinda quiet lately. so maybe i'll delurk for a post or two ... is it only my imagination? or has the quality of canned Chipotles (in general) been slipping recently ? i'm talking about those small, 215 G. (7 oz) tins of Peppers in Adobo that are so darned conveniently packaged. locally, there are three brands commonly available " Embasa , La Torre and La Costena " distinguished mainly by price ; fairly similar contents. My complaint ?? Filler ingredients, Diminishing quality, and lessening heat & smoke levels. added ingredients ? namely, onions, tomato paste and sugar. it seems, of late, that these "fillers" are getting much More prominent in the packaged product. typically, i toss a can of Chipotles into a small food processor ... whiz-it and freeze the un-used portion ( in spoonfuls on Saran ) for later use. the last can of La Costena brand that i bought, reminded me So much of "tomato-jam with chiles" ... that i vowed to switch brands. OK, so now it's La Torre brand .... not as much tomato paste, but when i try La Torre in my roast chicken recipe ... it quickly becomes apparent that this product is just Packed with sugar (burning easily on the roasting pan). a quick check today, of some frozen canned La Torre peppers confirms the extraordinarily High sugar content. virtually useless for my recipes. What gives here Folks ? i'm looking for canned Chipotles NOT candy-ed chipotles ! and, for that matter, not tomato-soup with chiles ! as for the heat/smoke factor? even taking into account some increased heat tolerance (on my part) ... over the last decade or so, the heat levels in canned chipotles seem to be decreasing ... smokiness too. (fwiw: i'm generally quite sensitive to Jal heat) as chipotle popularity goes up .... quality goes down ??! go figure. OK i'm almost outa steam let someone else take the soapbox regards peter g
