I really have no problem at all with slapping a new label on an "old" sauce.
Really I don't. Just don't try to pass it off as some "new" creation.
I think that for the most part, people who collect hot sauces are really
collecting the labels. They collect what they like the look of (I'm guilty of
this too) but I only eat what tastes good. There are very few sauces that I
actually use regularly.
All to often one sauce will taste an awful lot like another. Unless
there's some
"twist" or special use of an ingredient in just the right combination
there are
only so many ways to make a sauce. Everybody seems to have a different idea as
to what a "perfect" sauce is so I guess all's right with the world.
