I suppose it may be kindof weird, but I've got a little bit of a
masochistic tendency when it comes to food pairings.  But yea I did mean
an actual pickle. I've been using this recipe for pickled peaches...  it
works well.  I've also been adding a splash of Southern Comfort to the
pickling solution. Of course, you could forgo the whole pickling process
and do a fresh peach-southern comfort-peach habanero puree.  I'd just
cook the peaches first until soft to prevent discoloration.

Maybe with a little sugar or something the pickle it could work.  And,
again, worst-case scenario, you've got an awesome sauce for some pork
chops (which is actually how we use the pickled peaches at work, minus
the chiles)
