Thanks for the replies. I've printed them out (one was sent off list) and about to go shopping for the ingredients. Will give them a go on the smoker hopefully tomorrow. Calvin's powders: I'm really new at blending powders. Always been somewhat anal in that each pepper variety went into it's own little shaker and labeled whether smoked or not. This year I planted several new varieties (pimento types) with every intent to try in blends. Had fun with some unlikely combinations last winter and some did turn out kinda well... talking vinegar/sugar pickled rocotos, adding ground smoked powdered tamarind, dried pineapple, smoked seasalt etc. Just weird stuff. Not all that easy to grind sugary stuff... JohnT
