Ditto. Seriously off topic but home made burgers are delicious with a
medley of oil sprayed grilled veg. including, of course, chiles.
Burgers: Pick really lean beef. Cheap cuts are OK and usually taste
better than the expensive stuff. Trim off every bit of hard white
beef fat that you can see. Grind meat finely. (I have a method for
removing every last bit of fat if anyone is interested.) Now we have
a problem. Burgers don't work without fat. If you just stir in some
canola oil your burgers will fall apart when you try to make them
into patties. What you need to do is add a small amount of bread
crumbs to act as a reservoir for the oil. While you're at it throw in
some onion and garlic powder and maybe some chipotle powder for the
smokey taste. If you still have trouble shaping the patties try
judicious use of egg white. You don't need much. However you cook
them make sure it's HOT! You don't want tough old stewed burgers. Oh,
and make your own buns too :-)
