I would agree. When I was there a few years ago he was at the restaurant and came out and spoke to many tables, including ours. It was one of our most memorable dinners not because of that, but because of the FLAVORS. Cajun food in general needs to ramp up on the chiles. Or would that screw up Cajun food?
