Almost entirely off topic, unless served with fresh Cayenne dice, is Arm and
Leg Etoufee the dish that Anthony Hopkins served when he was "having an old
friend for dinner" near the end of Silence of the Lambs??

Yup.  His _Louisiana Kitchen_ is like a culinary bible to me.  There are
more than a few steps, ingredients, etc., that he puts in to make a few
recipes 'his own', but in general, just good recipes that result in really,
really good food that won't (nor should) cost one an arm and leg to make.

(Unless, of course, you're making Arm and Leg etouffee, for which I
recommend inviting a neighbor over for dinner.  Indeed.)
